3 cups lentils

2 medium sized carrots, peeled and chopped into small pieces

1 medium sized onion, chopped

2 medium sized potatoes, chopped into small pieces

1 bowl vegetable stock

2 teaspoons olive oil

3 celery stalks, chopped into small pieces

3 garlic cloves, finely chopped

1 tablespoon ground cumin

1 teaspoon dried celery

Salt to taste

1 teaspoon ground black pepper

3 tablespoons chopped coriander leaves

1 lemon, quartered

Instructions for Mexican Lentil Soup

Put olive oil, carrots, celery, onion and a pinch of salt in a large pot and leave it on low flame for some time or till the vegetables become soft.

After this, add garlic to it and let it cook, take care that the garlic does not burn.

Put all the remaining ingredients in the cooking pot, cover it well with a lid and let it cook on low flame for 20 minutes.

Do not overcook the lentils, keep opening the lid and checking it in between. If the lentils are overcooked, they lose their shape.
